4 out of 5 stars Stainless X30Cr13 steel, not carbon as Isabella claims   July 17, 2010

Isabella, you need to do some research before smearing a product through ignorance.

These knives are X30Cr13 stainless steel, the same steel used in many high-quality chef knives, and it is decidedly NOT carbon steel.

If you honestly believe that stainless steel means it will never stain, you should likely drop out of culinary school and choose a vocation where you won't be exposed to such illogical concepts.

Stainless steel doesn't develop the patina that carbon steel does, and cannot be sharpened to the same razor edge. It stays brighter and is easier to clean, but can definitely stain or discolor with use.

These knives are an excellent bargain - I'll be using them as a Christmas gift, myself. I may even get several sets, depending on who needs them. :)

I bought these for my significant other and despite I paid for the gift wrap they arrived in a plain brown box. I DID NOT apreciate that, Other than that great item.

1 out of 5 stars not stainless steel; carbon steel and it will stain   April 3, 2010

Having enrolled in culinary school I purchased these knives. They are advertised as stainless steal. They are not. I wondered why after just a few washings they were staining. After my knife-skills class and the lecture from the knife expert, I realized these were not stainless steal. Stain-less means they won't stain. Carbon steel knives stain. These knives after minimal use in 2 months are all stained up even though I wash and dry by hand. It is the lemons, onions, and other food materials which stain the steel. This wouldn't happen if they were truly stainless steel.

I am hoping amazon will accept the return of these knives that were falsly advertised as stainless steel.
